Black-Eyed Pea Salad:
It’s a very simple recipe.

Ingredients:
• 1-2 tomatoes, diced.
• 1/2 red onion (diced into smaller cubes).
• 1/2 red bell pepper (diced).
• 1 Tablespoon green onion (chopped).
• 1/4 cup rice wine vinegar.
• 1/4 cup good olive oil.
• 1/2 teaspoon sugar.
• 2 cans black-eyed peas (drained and then rinsed).
Direction/method:
Mix the black-eyed peas and all of the vegetables in a spacious bowl. Get a smaller bowl then add the vinegar, oil, sugar, and some pepper, blend and taste. Now, pour your vinegar and oil mixture over the salad. For best results, let the salad sit for a little while to soak up the flavours before serving. However, it’s pretty great to eat right away, too.
Avocado Salad:

If you love the creamy flavour of avocado, then this salad recipe is just for you. It’s pretty simple to put together. Get sweet onion, peppers, tomatoes, and cilantro spice things up along with a dash of lime juice. Chop all the ingredients and add into a bowl ensuring the avocado is the last. Then pour in the lime juice and then mix to let the flavour sink in. This is definitely one salad you would love to have days in a row!
