Smoky jollof rice is more than just food, it’s a celebration on a plate! This West African favourite is bold, spicy, and full of flavour. It’s also known for its slightly burnt, smoky taste that makes it truly unforgettable. Luckily, you can make it at home with simple ingredients and a few easy steps.

What you’ll need:

Before you begin, gather your ingredients. You’ll need long-grain parboiled rice, tomatoes, red bell peppers, onions, garlic, ginger, tomato paste, bay leaves, thyme, seasoning cubes, Scotch bonnet, salt, and vegetable oil. A cast-iron or heavy-bottomed pot works best for that signature smoky finish.

Blend the base sauce:

Blend tomatoes, peppers, onion, and Scotch bonnet until smooth. Set aside. In a pot, heat oil and sauté chopped onions. Add tomato paste and fry until it darkens. Then pour in the blended mix and cook until it reduces and the oil floats.

Season it right:

Now it’s time to layer in the flavour. Add thyme, seasoning cubes, bay leaves, and salt. Let the sauce simmer for about 10 minutes. This builds depth and richness in every spoonful.

Add rice and steam:

Rinse the rice thoroughly and stir it into the sauce. Add water just enough to cook the rice. Cover tightly with foil and the lid. Steam on low heat to allow the rice to absorb all that goodness.

Get that smoky finish:

Once cooked, increase the heat for 3–5 minutes without stirring. Let the bottom slightly burn. That’s where the smoky magic happens!
